This recipe was a happy delicious surprise! One morning I was juicing some carrots. I usually save some of the pulp to give to my dog with her meals, but I felt like I was still throwing a good amount of the pulp to the compost pile and that I should be doing something else with that beautiful carrot pulp. I mean it’s full of vitamins and good microbiome feeding fiber and it should be eaten! So, I created this yummy cookie recipe that includes 2 cups of the carrot fiber pulp that would have been trashed post juicing. If you don’t juice, don’t worry! I’ve got you. You can still make these cookies by finely grating the carrots for this recipe with your cheese grater.
These cookies taste fantastic with your morning coffee, a cup of tea or any time of day you need a little something sweet but no guilt because there is no added sugar! The cookies are sweetened with banana, date paste, apple, apricots, cranberries and fresh squeezed orange juice. And a couple of these tasty cookies are very filling because of the combination of fruits, veggies, and fats from the nuts and ghee.
Ingredients
(Wet Ingredients)
- 2 cups finely grated carrot (or 2 cups carrot juice pulp)
- 1 large apple, peeled and grated (or one large apple pulp)
- 3 ripe bananas, peeled and smashed
- ½ cup almond butter
- ½ cup fresh squeezed orange Juice
- ½ cup melted ghee (or butter)
- 1 TB date paste (See cooks note #1)
(Dry Ingredients)
- 2 teaspoons vanilla extract or 1 tsp vanilla powder
- 2 cups old-fashioned (uncooked) oats
- 1 cup almond flour (or almond meal)
- 1 cup unsweetened shredded coconut
- ½ cup ground flaxseed (like flour)
- ½ cup dried, unsweetened cranberries
- ½ cup chopped dried, unsweetened apricots
- 1 cup chopped raw pecans (see Cooks note #2)
- 2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- ¼ teaspoon ground nutmeg
- 1 teaspoon baking powder
- ¼ teaspoon sea salt
Instructions
- Heat oven to 350 degrees F. Line 2 cookie sheets with parchment paper.
- In a medium bowl, stir together the carrots, apple, almond butter, bananas, orange juice, flax seed, melted ghee, and vanilla extract till combined. If you are using vanilla power (which I highly recommend), mix it in with your dry spices and add it to the mix then.
- In a large bowl, stir together the oats, almond flour, shredded coconut, cranberries, apricots, pecans, chia seeds, cinnamon, allspice, baking powder, nutmeg & salt.
- Combine the carrot mixture with the oat mixture. Stir with a spoon until well combined to form a cookie dough consistency.
- Using a large spoon, scoop some dough, and roll into balls using your hands. Then place the ball on the cookie sheet and flatten it to about a 1/3 – 1/2 inch thickness. You should be able to get 16-20 cookies per cookie sheet.
- Bake at 350 degrees F, until golden brown on the bottom, about 18 minutes, in batches of 16 – 20 on each cookie sheet.

Cooks Note #2-You could add any nut although I’ve tried several different varieties and I prefer pecans. Or if you are staying away from nuts due to allergies or other reasons, you could use seeds such as hemp, chia, pumpkin, or sunflower.
