Noble Alchemy’s No Added Sugar Oatmeal Banana Spice Cookies are best eaten after you have completed the detox because of the egg in this recipe. They contain no added sugar and are sweetened with ripe banana direct from Mother Earth. They are great for breakfast on the go, and they are especially delicious slightly warm with your morning black coffee or tea. But I also like them as an afternoon snack for a boost of energy. Whenever you eat them, I know you’ll enjoy, especially knowing they are healthy!
Ingredients
- 3 ripe bananas, mashed
- 2 TB Almond Butter
- 2 cups old fashioned oats (not instant oats)
- 1/2 cup almond meal (or almond flour)
- 1 tsp baking soda
- 1 egg, beaten *see Cooks Note
- 1 tsp. vanilla
- 1 TB ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1/4 tsp orange peel
- 1/2 cup chopped pecans
Instructions
- Preheat Oven 350 degrees.
- Mash bananas in a medium sized mixing bowl with a fork.
- Mix dry ingredients: oats, almond meal, cinnamon, nutmeg, cloves, allspice, orange peel & baking soda in a large bowl.
- Mix egg and vanilla then, add to oat mixture and mix well. Add almond butter and bananas to mixture and combine.
- Add chopped pecans and mix well.
- The dough will be relatively wet, I use my hands and I divide the mixture into 15 or 16 balls and place cookies onto a baking sheet lined with parchment paper. Then squish the cookies so they are flattened balls.
- Bake at 350 degrees for 15-17 minutes until cookies are slightly browned and held together (they will be slightly soft). Let cool on cookie sheet for 5 minutes then transfer to a rack or plate.
For a twist, try adding 1/2 cup raisins or dried cranberries (but be sure the dried fruit has no added sugar). Also good with no sugar added dark chocolate chunks, or sunflower seeds (no shell of course). If you add any of these things, do it when you add the pecans (or leave the pecans out).
*Cooks Note: If you are going vegan, use 1 TB ground flax seeds and 1TB water instead of the egg, and add the flax with the dry ingredients and the water with the wet ingredients.
