Healthy Eats ~ Noble Alchemy’s Black Bean Fiesta Soup

This delicious soup is super easy to make, filling and has just the right amount of bite. Often times, I’ll meal prep a lot of onions, peppers and garlic as they are the base of many of my yummy recipes. I had too many one day and I developed this recipe to use them up. Wow, it turned out delicious and I had enough leftovers to share with friends. And it was ready to eat in less than an hour (but had the taste like I slaved over the stove all day). 

 

Ingredients

  • 1 small organic yellow onion chopped
  • ½ cup fresh organic cilantro chopped
  • 1 tsp chopped fresh garlic
  • 1 organic jalapeno pepper chopped
  • 1 small green bell pepper chopped
  • 1 TB Noble Achemey’s No Added Sugar Taco Seasoning Blend (grab that recipe HERE)
  • 1 can diced green chilies (organic if you can find them)
  • 1 can Muir Glen organic diced fire roasted tomatoes with chipotle peppers
  • 1 15 oz can organic black beans (rinsed)
  • 1.75 cups organic chicken broth
  • 1 cup organic frozen corn (optional)

 

Ingredients

  1. Over medium high heat, pour about ¼ cup organic chicken broth into a medium size pot.
  2. Add onion, pepper and garlic and sauté till limp (about 7 minutes).
  3. Add taco seasoning and stir well.
  4. Add diced tomatoes and stir.
  5. Add black beans and stir.
  6. Add remaining broth and stir.

Bring to a boil and let simmer at boiling about 5 minutes, then reduce heat to medium and let simmer for 30 minutes stirring about every 10 minutes. If you want to cook it longer, just turn the heat to low (low as your stove will go) and leave it going for up to 2 hours, stirring occasionally. 

 

If you decide to add corn, add it when you turn the heat down to medium.

 

 

This soup is delicious served with a great mixed green salad drizzled with lemon or lime, fresh avocado and fresh cilantro and it’s also great topped with a little Greek yogurt and/or served with organic corn tortilla chips.
