Healthy Eats – Italian Zoodles Recipe

Looking for an easy, flavorful, delicious main dish that can also be a wonderful side accompaniment to a lovely piece of grilled fish or chicken? Look no further. This Italian Zoodles recipe is super quick, easy, healthy and oh so tasty! My gift to you! 


Ingredients

  • 1 TB avocado cooking oil (you could also use 1/4 cup vegetable broth in lieu of oil)
  • 1 small yellow onion, diced
  • 1 clove of garlic, diced
  • 4 cups of zoodles (spiraled zucchini)
  • 30 cherry or grape tomatoes, halved
  • 1 TB Trader Joe’s Italian Style Soffritto Seasoning Blend (unfortunately it’s not organic but it is sugar free)
  • ½ cup fresh basil, chopped (or if you use dried, use a  tablespoon)-although fresh is best
  • ¼ cup parmesan cheese, grated

Instructions

  1. Add avocado oil (or veggie broth) to pan and sauté onion and garlic about 5 minutes on medium heat.
  2. Add garlic and once fragrant, add zoodles, stir and cook about 5 minutes.
  3. Add Soffritto seasoning, and tomatoes, stir and cook another 5 minutes.
  4. Add basil, stir and turn off the stove.
  5. Finally, do a light sprinkle of parmesan cheese.

This dish cooks fast and it’s a delicious main dish or served aside a nice piece of grilled organic pasture raised chicken, or grass fed, pasture raised, grass finished rib eye. 


I make my own zoodles with the spiralizer attachment on my KitchenAid mixer and I freeze the zoodles till I’m ready to use them (they only keep well in the freezer for about a month, if they get to icy they are trash).


If you don’t have a Kitchen Aid mixer you can buy zoodles already made sometimes fresh and definitely frozen in most health food and traditional grocery stores (Natural Grocers, Sprouts, Whole Foods, Safeway and sometimes Trader Joe’s all carries them), right next to carrot zoodles and squash zoodles.


If you choose to saute the onion and garlic in oil, be sure to use avocado oil in this dish as olive oil can’t take the high temperature like the avocado oil can.
