Healthy Eats ~ Healthy Asian Turkey Lettuce Wraps Recipe

I created this delicious dish one day after a long walk up in the mountains with my dog. When we were done hiking, I was starving! I wanted something Asian and my body was craving some meat. I almost stopped to pick up sushi, but decided against it and came straight home instead. 

 

Based on what I had in my fridge, I created and cooked this dish. It totally hit the spot! 

 

 

Now, when I’m craving a meal with an Asian slant, but don’t want all the MSG, and unhealthy sauces, I make this recipe to satisfy my cravings. Even with the chopping required of some ingredients, this dish is easy to make and cooks up fast. And, it’s packed with good-for-you ingredients, it’s super filling and best of all, the flavors taste delicious together.

 

It will easily serve 4 people, but if you have leftover meat, it freezes well or can easily be refrigerated for later. 

 

Ingredients 

  • 1 lb ground turkey
  • 1/4 cup vegetable broth 
  • 1 tbsp almond butter (with no added sugar)
  • 1 cup mushroom caps, diced
  • 1 jalapeno pepper, diced
  • ½ red onion, diced
  • 2 garlic cloves, diced
  • 2 tbsp fresh ginger, minced
  • 1 8 oz can water chestnuts, drained and diced
  • 1 tbsp rice vinegar
  • ¼ cup Bragg Liquid Aminos + more for serving
  • 1 tbsp no added sugar Sriracha + more for serving
  • Romaine lettuce leaves (preferably organic), washed
  • Green onion, sliced (optional)
  • Cilantro, chopped (optional)  

Instructions

  1. In a large fry pan, cook ground turkey, jalapeno pepper, red onion, garlic and ginger over medium heat for about 10 minutes till turkey is cooked through.
  2. Stir in the almond butter till it’s melted and well combined.
  3. Add mushrooms and water chestnuts and stir.
  4. Let it cook a couple minutes, then add the rice vinegar and Liquid Aminos then stir well.
  5. Cook for another 5 minutes and viola, it’s done!
  6. To serve, load the turkey mixture onto your lettuce leaves and if you like, top with green onion, cilantro, a drizzle more of the liquid aminos and a squeeze of Sriracha. 

Cooks Note: If you’ve never heard of Bragg Liquid Aminos, let me be the first to introduce it to you. It is a non-GMO soy protein seasoning and can be used as a healthy soy sauce alternative. It has 1 gram of protein for each tsp, and contains 16 different amino acids (essential and non-essential). If you are using this product, you won’t need to add salt, as like it’s cousin – traditional soy sauce – it’s got a salty flavor (and contains 310 mg of sodium per tsp). You could substitute Coconut Aminos for a lighter flavor and no soy.
