
This powerful healthy green juice is packed with nutrients to fuel your body and give you energy. I usually drink it as a meal replacement, mostly because it fills me up! I also get a huge boost of energy whenever I drink this “Mean Green” concoction, and many of my friends that I’ve shared it with tell me that they get that boost too!
Go for all organic, fresh, uncooked fruits and veggies when juicing. And of course, you will need a “juicer” (juicing machine) to whip this amazing juice up (Amazon sells a lot of juicers and I’ve suggested a good starter juicer below – no I’m not paid for making this recommendation, I just know it’s a really good juicer for the price).
When you look at the ingredients below, you’ll probably think that it seems like a lot of greens but big amounts of the veggies and fruits don’t necessarily make a lot of juice. This recipe makes enough juice for 3-4 people depending on the sizes of the “bunches” of veggies that you buy. If you are drinking it as a meal replacement, it may be a single serving or just enough for 2 people.
This juice can be stored in your fridge (in mason jars) for a day or two, but it’s best for your body to consume it right after you juice it.

Ingredients
1 bunch of fresh organic kale (I like green but purple or any fresh variety of kale will work)
4 hand-fulls of fresh organic spinach
1 bunch of fresh organic Bok-choy (baby Bok-choy is a good substitute if you can’t find regular Bok-choy but buy 2 bunches if you use the baby version as they are smaller bunches)
1 large organic green apple, seeded
1 fresh organic turmeric root (about the length of your pinky finger))
1- 1″ piece of fresh organic ginger root
1 lemon or lime (or both), peeled & quartered
Instructions
Put each veggie in a colander and rinse all veggies well in cold water. Be sure to wash each leaf. You’ll need to do this in several batches. Tear or cut the greens so they go down the juicer chute more easily. Seed and slice your apple, but leave the skin on it. Just rinse the turmeric and ginger (do not take the skin off, the juicer will do that for you). Do however take the skin off of your lemon or lime and cut it into quarters before juicing (with the skin on, it’s super strong, and to me it’s overpowering and less enjoyable).
Once everything is washed and cut, you are ready to start juicing. Get your pulp bowl and juice catcher in place and get juicing by feeding the items down the chute. It takes a lot of greens for a little juice so it may take a few fist-fulls of veggies before you see any juice.
I usually alternate the leafy greens and apple slices as the apple pushes the greens through the juicer and I always end with the citrus, but it doesn’t really matter. Just get the items down the chute and use the “plunger” that came with the machine to push the items through the chute as needed. Keep an eye on your pulp bowl (you may need to dump it a few times (depending on it’s size), and keep an eye on your juice catch as you may need to dump it into a larger pitcher before you finish juicing all of your ingredients.
Once everything is through the machine, and if you haven’t already, then dump the juice into a larger pitcher and mix it well. Serve it with no ice immediately, or store it in mason jars (best to drink within in 2-days max).
Fresh made juice is always best when you drink it immediately after juicing so you get the most nutritional value from each ingredient. Of course that isn’t always possible, so you can store it, but you’ll need to mix well before drinking it as it will separate in the storage jar in the fridge.
