Healthy Eats – Nada Added Sugar Salsa Recipe

With the harvest of annual tomatoes in full swing  here in the United States, I can’t help but share this delicious no sugar, no oil, salsa recipe with you. It’s so fresh, simple, healthy, and tastes delicious! It adds great flavor to your favorite vegetables, but it’s also perfectly paired with any Mexican dish as a topping or even simply served over salad, chicken or fish. It takes just a few minutes to whip up and only needs rest for 15 minutes in the fridge so the flavors combine before serving. Perfect and healthy for football season’s Sunday snack or buffet! 


Ingredients

  • 2 cups multi color grape tomatoes (preferably home grown or from your local farmers market), halved or quartered depending on your preference and the size of the tomatoes
  • 2 jalapeno, seeded & diced
  • 1/2 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp (or one clove) garlic, diced
  • 3/4 cup canned black beans, drained and rinsed
  • Juice from 1 squeezed lime
  • 2 tsp Trader Joes Chile Lime Seasoning
  • pinch of black pepper

Instructions

Mix all ingredients together in a medium bowl and let sit in refrigerator for at least 15 minutes before serving.

This salsa adds a great kick to your favorite veggies (especially good with cucumber rounds, sliced zucchini or stuffed into half an avocado as pictured. It’s also good with ORGANIC corn tortilla chips, (I like Late July Organic Sea Salt Tortilla Chips). I personally love this salsa served over my mixed greens or with my lentil taco recipe.
