šæ Fresh, Flavorful, and Full of Good Vibes: Lentil Bruschetta
This isnāt your average bruschetta. This high-vibe version skips the processed oils and levels up with fresh tomatoes, herbs, and hearty lentilsāmaking it as nourishing as it is delicious.
The inspiration? A dear friend once brought over her version made with jarred bruschetta for a party appetizerāand it was a total crowd-pleaser. But when I flipped that label and saw palm oil front and center, I knew I could do better. So I recreated it from scratch with fresh, wholesome ingredients (with no oil!), and let me tell youāit turned out even better than the original.
This dish is as versatile as it is flavorful. Serve it cold as a refreshing dip with Top Seedz crackers, spoon it into crisp romaine or butter lettuce leaves for easy finger food, or warm it up and use it like a pasta sauce over zoodles. You can even pile it onto a bowl of mixed greens for a no-dressing-needed saladāor eat it straight from the fridge with a spoon (no judgment here).

Ingredients
2 cups cherry tomatoes, chopped (I like using red & yellow preferably from the garden for the beautiful colors and flavors)
1 yellow onion, diced
¼ cup fresh basil, chopped
6 cloves garlic, diced
1 box Trader Joeās packaged steamed lentils, crumbled (or home cooked if you are feeling ambitious)
½ tsp garlic powder
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil
¼ cup parmesan cheese
Instructions
- In a large bowl, gently combine the chopped tomatoes, diced onion, fresh basil, and garlic.
- Crumble the steamed lentils and fold them into the tomato mixture.
- Sprinkle in the dried herbs and parmesan cheese, mixing just until combined.
- Cover and let the mixture rest in the fridge for at least 30 minutes to allow the flavors to meld.
Serving Suggestions

Vegan Option
You can swap the parmesan cheese for a vegan version, but check the ingredients! Many plant-based cheeses contain highly processed oils I prefer to avoid. If youāve found a clean version you love, go for it!
